Nay is the traditional Lebanese musical instrument
of the shepherds of Mount Lebanon

The Lebanese olive trees have been quoted in several holy books.

To produce Lebanese olive oil according to international standards, Tanaïl Property established a joint venture with Monini SpA, the number one producer of extra virgin olive oil in Italy.

Production process
An olive tree can yield up to 50 kg per year but the average is somewhere between 15 and 50 Kg and an average 5 kg are pressed
to obtain one liter of olive oil.

It is in fact essential that the olives are harvested at the right stage of maturity and should not touch the ground to avoid being spoiled. Once harvested, the olives must be carefully washed and separated from leaves and twigs but must remain intact. This procedure must be carried out immediately after harvesting.

The grinding or crushing is done by using big grindstones (molazze) that shatter the olives completely. The paste obtained is an amalgamation of three constituents - oil, pulp and water - and is placed in layers on disks. The whole grinding process is completely natural and does not utilize any chemical or additive.

The disks with the olive paste are piled and, through a hydraulic press, they are compressed in order to extract a liquid substance, a combination of oil and water, which is then centrifuged to separate water from oil. The extra virgin olive oil that results is defined as first cold press of the olives.

OTP policy
We conduct several laboratory analyses on each batch of olive oil to ensure that it falls within international standards to warrant the NAY* brand.

The olive oil with acidity lower than 1% and exceptional characteristics in flavor and aroma is selected by OTP immediately as extra virgin olive oil.

Nay extra virgin oil's special characteristic is its rich and fruity taste that makes it ideal for salads, labné and Lebanese mezzé. It is a dressing on its own. The olive oil with acidity between 1% and 2% and good characteristics in flavor and aroma is selected by NAY immediately as pure olive oil. Nay pure olive oil is excellent for all cooked and cold dishes, especially Lebanese cuisine. Beside its accordance with international standards, the origin of olive oil is equally important. Nay is selected from Lebanese olives from Northern Lebanon (Akkar, Douma), the Bekaa Valley (Rashaya, Hasbaya) and Southern Lebanon. Beside its own brand, Nay pure and Nay extra virgin olive oil, OTP also provides tins, drums and even bulk quantities of extra virgin and pure olive oil.
