Three renowned chefs taking over Massaya's kitchen
Massaya Faqra is delighted to announce an International Chefs Programme as part of our celebration of 20 years of winemaking in Lebanon. I am writing to give you details of the three renowned chefs who are taking part and to invite you to take advantage of this unique opportunity to host a table for your important clients or as a treat for your staff. 

The visiting chefs will all take charge of our kitchen for a few days during this year and will prepare a celebration lunch on Saturday as a set menu. You and your guests will be able to see the team at work and discuss gastronomy with the chefs. 

The precise dates of the dinners have not been finalised so this message includes the chefs’ residency period to give you plenty of time to make arrangements. We will be pleased to offer the international dinner menu and drinks at special rates for group bookings.

Melissa O’Donnell Thursday May 19th, 2018
She fell in love with restaurants while waitressing as a student and now she’s marking 15 years running her own on New York’s eclectic Lower East Side. Until recently her restaurant was Thelma on Clinton Street, after her Lebanese grandmother, and Melissa is one of the best known chefs in the neighbourhood. Last autumn she transformed it into Lil’ Gem serving what she describes as ‘Lebanese-ish’ dishes. She says her cooking combines the flavour, the feeling and the essence of Lebanon.

Chef Melissa’s set menu:

To start: 
Miso-fermented hummus, paprika, olive oil

Salads to share: 
Grilled Romaine, Radish, “Green Goddess” Dressing 
Frisee au Lardon: Frisee, House Smoked Duck Bacon, Poached Egg 
Artichoke, Lemon-Sumac Remoulade, Dill

Kibbeh starters to share:
Sweet potato Quinoa Kibbeh, Goats Cheese, Almond, Honey
Smoked Trout Quinoa Kibbeh, Salmon Roe, Dill, Herbed Labneh

A choice of main course:
Smoked Eggplant, Beet Tartare, Roasted Garlic, Tahini Sauce
Duck Leg Confit, Braised Cabbage, Shawarma Spice 
Lamb, Cured and Smoked, Wilted Greens, Lemon, Mint

Mark Hix Sunday October 7 – Saturday October 13 
As a chef and businessman Mark has few equals in London where his name has become synonymous with original ideas and outstanding quality. This is what he will be bringing to Faqra. Mark was chef director for the Caprice group of famous London restaurants (including The Ivy) before opening his own oyster and chop house in 2008. Since then he has expanded with Hix eateries in the most interesting parts of London and on England’s south coast where he hosts an annual food festival.

Daniel Hebet Saturday December 8 – Sunday December 9 
Daniel is the quintessential French chef with outstanding flair and a passion for quality from the freshest of seasonal ingredients. He worked for a time in Lima, Peru and has introduced elements from Peruvian cooking into some of his Mediterranean dishes. He first came to prominence at La Mirande hotel in Avignon where he was awarded a Michelin star, before opening Le Jardin du Quai in the picturesque Provencal town of Isle sur la Sorgue. ‘I live to serve good food,’ he says.
